Chef Series: Ray Anthony Barrett (CINQUÉ, LA)
Ray Anthony Barrett is a visual artist & chef based in Los Angeles. His critically acclaimed pop-up, CINQUÉ, defines Contemporary Soul Food.
His menus trace the migration of West African cuisine across the Atlantic, into the American South & ultimately to California. With heirloom ingredients he reimagines traditional recipes into dishes that tell a story about Black foodways that continues to evolve in response to geography & the cultural moment.
Barrett has done projects at The Underground Museum & Gagosian Gallery. His work has been profiled in Compound Butter & The Los Angeles Times.
Donations: Chosen by the chef, profits from February sales will benefit PROSPERITY MARKET's current CROWDFUNDING CAMPAIGN.
Prosperity Market is a farmers market on wheels & a food truck in one, featuring Black farmers & chefs! Traveling throughout Los Angeles, they are transforming the local ecosystem and economy through agriculture, food access, nutrition education, and community partnerships.
Flavor: Chickpea Miso & Tomato Pomegranate Chutney - This flavor is exploding with umami! Silky hummus is layered with a chutney of sweet, tangy roasted tomato & pomegranate. Topped with chickpeas coated in a chickpea miso glaze (whoa!) & a sprinkling of vegan furikake. Inspired by a trip to Koda Farms.
